High protein, high fiber, gluten free yummy fall pumpkin waffles or pancakes! These waffles are packed with healthy fiber and protein for an easy and nutritious breakfast option.

Ingredients
- 2 medium eggs
- 3/4 cup all purpose gluten free flour King Arthur brand works well
- 1/4 cup canned pumpkin
- 1 tsp baking soda
- 1-2 tsp cinnamon optional
Instructions
- Combine all ingredients in a bowl and whisk together
- Heat a pre-oiled skillet or waffle maker (use high burn oil such as avocado, coconut, grass fed butter or ghee)
- Place 1/4 cup of batter on skillet or waffle maker
- Cook for 2-3 minutes on each side. Batter may not bubble before requiring flipping.
- Top with grass fed butter and pure maple syrup. Enjoy!
