
Homemade Mayonnaise
Easy peasy homemade mayonnaise! Why make your own mayo? Store bought mayo is typically made with inflammatory oils like soybean oil. Make your mayo at home using anti-inflammatory, high polyphenol olive oil to promote brain and cell membrane health. Plus you can spice it up any way you like!

- 1 Immersion blender or blender or hand mixer optional but does help
Ingredients
- 2 eggs
- 1.5 tbsp dijon mustard
- 16 ounces cold pressed, virgin, high polyphenol olive oil *Atlas organic olive oil is a great brand!
Instructions
- Mix all ingredients in a bowl using an immersion blender, blender or hand mixer.Optional: add spices or herbs that you love! My favorite is fresh garlic and thyme 🙂*Note: this recipe does not contain any preservatives. It will likely only keep for 1 week in the fridge. Recommend to cut the recipe in half if you do not use mayo much to avoid wasting
